Banana "Ice Cream"

105 degrees today in Southern California...UGH!!

Today was as good as any to try out a recipe that I have seen floating around the internet.  This is a recipe for "ice cream".  But this is not your typical high calorie treat.  It has just 3 simple ingredients and is actually good for you!



Ingredients

4 bananas, slightly overripe
2 tablespoons of peanut butter
2 teaspoons cocoa powder


Directions

Peel the bananas and slice into 1/2 inch pieces. 



Lay the slices flat in one layer on your cutting board or a cookie sheet and pop into the freezer for about 1 hour.



Break out your food processor and install the chopping blade.

Add the banana slices to the food processor and mix to a smooth, creamy consistency. 





You may have to scrape the sides of the bowl occasionally to incorporate all of the banana.

Add in the peanut butter (chunky or smooth works just fine).


Add in the cocoa powder.



Mix until well blended....and give it a taste test.  Go ahead and tweak to your liking by adding more peanut butter, some nutella...whatever flips your skirt!



Pour the soft-serve mixture into a freezer-safe container and freeze until solid.

Scoop and enjoy as you would regular ice cream.

Corn Casserole

This corn casserole is really great for summer BBQ's, weekday meals and holiday gatherings.   Who doesn't love a recipe that works great year-round?  It is super-easy to put together and pop in the oven and uses ingredients that I always have on hand!



Ingredients

1 (15 1/4 oz) can whole kernel corn, drained
1 (14 3/4 oz) can cream-style corn
1 (8 oz) package Jiffy corn muffin mix
1 cup sour cream
1/2 cup butter, melted
1 to 1 1/2 cups shredded Cheddar (or whatever cheese you have on hand)



Directions

Preheat oven to 350˚F. Grease a 9- by 13-inch baking dish or large casserole dish.

Mix together the corn, Jiffy, sour cream and butter in a large bowl. Stir in the cheese. Pour into the prepared pan.




 Bake for 55 minutes, or until golden brown and set. Let stand 5 minutes before serving.


This casserole would be great with jalapeno cheese to give it a little "kick" or even just some sliced jalapenos right in the mix.
