Honey Butter

In college, I worked at a restaurant in Champaign, IL called Pickles.  This was a local favorite and was known for their nachos, burgers, just about everything was good there!  I heard that it closed a few years back, so I have been searching for the recipes that I learned from the cooks while waitressing there.  So the first recipe that I found is for the honey butter.  If I remember correctly, they always served it with a croissant?  The recipe is simple, but really good to have on hand for toast in the morning or on cornbread!

1 part butter
1 part honey

Directions:

Be sure to bring your butter to room temperature before you even attempt to mix this.  I promise it will make you life easier!

Whip the butter in a mixer (love my Kitchenaid!)

Once the butter is thoroughly whipped, drizzle in the honey while it is mixing (scraping the sides as necessary).

Store the honey butter in a lidded container in the refrigerator.

Simple right?

A question for any Champaign County friends....what was your favorite Pickles meal??  (I may just have the recipe for it hidden somewhere!)
