I have been on a new quest to find our favorite Vanilla Ice Cream to use as a base for our summer creations! This is the second recipe that I have tried and am pretty happy with it! Seriously, you just can't go wrong with a Paula Deen recipe....am I right?
Ingredients
4 eggs
2 cups white sugar
2 (12-ounce) cans evaporated milk
1 (14-ounce) can sweetened condensed milk
1 tablespoon pure vanilla extract
Whole milk
Directions
With an electric mixer or a whisk, cream eggs and sugar.
Add evaporated milk, condensed milk, and vanilla. Beat well.
Pour into an electric ice cream maker. *Add whole milk to fill line.
* For fruit ice cream such as strawberry or peach: 2 cups sliced fresh fruit covered with 1 cup sugar. Add to mixture before whole milk, and mix well.
Insert dasher and turn on the machine. Follow timing instructions specific to your ice cream maker. (I did about 25 minutes for mine).
Note: This recipe is for 1 gallon of ice cream. If you only have a 1/2 gallon ice cream maker (like me), just divide the mixture in half. Pour the half mixture into the ice cream maker and add the whole milk. Store the extra ice cream mixture, covered, in the refrigerator for a few days. Clean and re-freeze the ice cream maker bowl for 24 hours and then make your second batch of ice cream!
Spoon into a plastic freezer container and let harden or enjoy as soft serve!
